WECIPE WEDNESDAY!

Okay, so I like it when my fellow bloggers have a little theme day......The Sunday Funnies, Word Shirt Wednesday, and Flashback Friday to name a few. So I thought I would post a recipe today. Now, this doesn't mean that I will post a recipe every Wednesday. Just when I feel like it. Here is a recipe that I tried this week. I got it from my dear friend Catherine. It was yummy! I did not have the peas so I substituted thinly sliced red pepper and I am sure any vegetable would work. The subtle lemon flavor was really great! And most importantly, the whole family liked it. Yay! Thanks Catherine!


LEMON-CHICKEN PASTA (FROM Catherine)
1 tsp. olive oil
4-6 cloves garlic
3-4 chicken breasts
1 cup frozen peas
2/3 cup shredded carrot
1 can chicken broth
8 oz cream cheese (I use the light)
1 pkg. bowtie pasta
6 TB parmesan cheese
1 tsp. grated lemon zest
1/2 tsp. pepper
1/2 tsp. salt

In a large skillet, add olive oil. Place over med-high heat until hot. Add garlic and saute. Add chicken and saute until cooked. Add peas and carrots. Saute another minute. Remove from skillet. Set aside. Add broth and cream cheese to skillet - cook over med-high heat 3 min. or until cheese melts, stirring constantly w/ a whisk. Stir in chicken mixture, pasta and next 4 ingredients - cook another minute.

It's great when your kids get old enough to help in the kitchen. I mean TRULY help. Katie has mastered guacamole. She can make it all on her own. She is also in charge of making ranch dressing....her personal favorite food. Zach loves to create recipes and likes to watch Iron Chef on the food network. He loves anything involving knives and shopping. I often ask him to make the salad. He is very creative! He made this great salad the other day.






Unfortunately, our cynical, witty and blasphemous dear 14 year old daughter-who-shall-not-be named decided to innocently "eat the o" (I was just eating the "o" mom and well.....












What can I say?

THEY STOLE HER WORD!!!!

Okay, so the other day Jim pulled into McDonalds with Seth and Hannah. Hannah saw a FedEx truck and she screamed: "WHAT?! "FED-EX"?? THEY STOLE MY WORD! I MADE UP THAT WORD AND THEY STOLE IT FROM ME! AND THEY EVEN USED STUPID COLORS! MY COLORS WERE PINK AND PURPLE!!!" Jim didn't know quite what to say. Sometimes you just let these things go because they are so hilarious that you don't want to burst the bubble just yet. Jim forgot to tell me the story. (I chastised him severely for not being on top of bloggable stories!).

So last night we were all in the car and Hannah saw the FedEx store down the road and started into her tirade again. I was confused and Jim explained under his breath that she thinks she made up the word. Of course Katie has to jump in though and explain that they have been around for a LONG time and they deliver packages and told Hannah she did not make up the word (kill-joy). Hannah was not in the least deterred. She simply said "Well then they must have heard me saying the word and COPIED it.

Zach asked her: What does FedEx mean? She said: "It means lots of things. It means an elephant's trunk, a kind of french fries, peanuts, sickness and chunky chick." "It means whatever I want it to mean". Okay Hannah. You win. Any lawyers reading this blog who would be willing to help us with the copyright infringement lawsuit?

DISTURBING ON SO MANY LEVELS

I found this drawing in a notebook on the counter. It is my cute little almost-red-head 7 year old's writing and artwork. It is very disturbing on so many levels. Now I know for certain that I let him play too many video games.
