Okay, so I like it when my fellow bloggers have a little theme day......The Sunday Funnies, Word Shirt Wednesday, and Flashback Friday to name a few. So I thought I would post a recipe today. Now, this doesn't mean that I will post a recipe every Wednesday. Just when I feel like it. Here is a recipe that I tried this week. I got it from my dear friend Catherine. It was yummy! I did not have the peas so I substituted thinly sliced red pepper and I am sure any vegetable would work. The subtle lemon flavor was really great! And most importantly, the whole family liked it. LEMON-CHICKEN PASTA (FROM Catherine)
1 tsp. olive oil
4-6 cloves garlic
3-4 chicken breasts
1 cup frozen peas
2/3 cup shredded carrot
1 can chicken broth
8 oz cream cheese (I use the light)
1 pkg. bowtie pasta
6 TB parmesan cheese
1 tsp. grated lemon zest
1/2 tsp. pepper
1/2 tsp. salt
In a large skillet, add olive oil. Place over med-high heat until hot. Add garlic and saute. Add chicken and saute until cooked. Add peas and carrots. Saute another minute. Remove from skillet. Set aside. Add broth and cream cheese to skillet - cook over med-high heat 3 min. or until cheese melts, stirring constantly w/ a whisk. Stir in chicken mixture, pasta and next 4 ingredients - cook another minute.

I love you Wesipe Wednesday! This sounds really yummy. I am going to try it but I will use whole wheat pasta. (We are trying to eat healthier at our house, ha ha) I look forward to the next one. Thanks!
